For the Rice Paper Rolls:
- 10–12 rice paper wrappers

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the Apple Filling: In a skillet, melt butter and add diced apples, brown sugar, cinnamon, and nutmeg. Cook until apples are tender. Stir in vanilla extract.
- Assemble the Rolls: Dip rice paper wrappers in warm water to soften. Fill with apple mixture, fold, and roll tightly. Place on baking sheet.
- Bake: Brush rolls with melted butter, sprinkle with sugar, and bake for 18–20 minutes until golden and crisp.
- Serve: Let cool slightly before serving.
