Andouille Sausage:

  • 2 cloves garlic, minced
  • 1½ cups chicken broth

Instructions

  1. Cook Andouille Sausage: In a skillet over medium heat, cook the diced andouille sausage until browned, about 5–6 minutes. Remove with a slotted spoon and set aside, leaving the drippings in the pan.
  2. Make Roux: Add butter to the skillet. Once melted, stir in the flour to make a roux. Cook, stirring constantly, for 2–3 minutes until golden brown.
  3. Sauté Vegetables: Add the onion, bell pepper, and celery to the roux. Sauté for 3–4 minutes until softened. Stir in the garlic and cook for 1 more minute.
  4. Add Broth and Milk: Slowly whisk in the chicken broth and then the milk or cream. Stir until smooth and slightly thickened, about 3–5 minutes.
  5. Finish and Serve: Return the sausage to the pan and add Cajun seasoning, smoked paprika, salt, and black pepper to taste. Simmer on low for 5–10 minutes to blend flavors. Serve hot over desired accompaniment.
