Bread:
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 2 medium apples (peeled and chopped)
- 2/3 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
Glaze:
- 1/2 cup powdered sugar
- 1–2 teaspoons milk or cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan. In a small bowl, mix brown sugar and cinnamon. Set aside. Toss chopped apples with a spoonful of the cinnamon-sugar mixture.
- In a large mixing bowl, cream granulated sugar and butter until smooth. Beat in eggs one at a time, then add vanilla. In a separate bowl, whisk together flour and baking powder. Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until combined.
- Pour half the batter into the prepared loaf pan. Layer half the apple mixture and half the cinnamon-sugar over the batter. Repeat with remaining batter, apples, and cinnamon-sugar. Swirl the top layer with a knife. Bake for 50–60 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Whisk together glaze ingredients until smooth. Drizzle over warm or cooled bread before serving.
