Bread:

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 medium apples (peeled and chopped)
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

Glaze:

  • 1/2 cup powdered sugar
  • 12 teaspoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan. In a small bowl, mix brown sugar and cinnamon. Set aside. Toss chopped apples with a spoonful of the cinnamon-sugar mixture.
  2. In a large mixing bowl, cream granulated sugar and butter until smooth. Beat in eggs one at a time, then add vanilla. In a separate bowl, whisk together flour and baking powder. Gradually add dry ingredients to the wet mixture, alternating with milk, and mix until combined.
  3. Pour half the batter into the prepared loaf pan. Layer half the apple mixture and half the cinnamon-sugar over the batter. Repeat with remaining batter, apples, and cinnamon-sugar. Swirl the top layer with a knife. Bake for 50–60 minutes.
  4. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Whisk together glaze ingredients until smooth. Drizzle over warm or cooled bread before serving.
