Description

  • 1/2 cup mandarin orange segments (drained and chopped)

  • 2 large eggs
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin pan with liners or grease.
  2. Mix dry ingredients: In a bowl, combine flour, sugars, baking powder, baking soda, salt, and coconut.
  3. Prepare wet ingredients: In another bowl, beat eggs, then add yogurt, oil, milk, and vanilla.
