- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Zest of 1 orange (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin pan with liners or grease.
- Mix dry ingredients: In a bowl, combine flour, sugars, baking powder, baking soda, salt, and coconut.
- Prepare wet ingredients: In another bowl, beat eggs, then add yogurt, oil, milk, and vanilla.
- Combine: Mix wet ingredients into dry, then gently fold in fruits and zest.

- Cool: Let muffins cool in the pan before transferring to a rack.
