Description

These Almond Joy Air Fryer Cookies are a delightful treat that combines the flavors of almond, coconut, and chocolate in a perfectly crispy-on-the-outside, chewy-on-the-inside cookie. Baking in the air fryer gives them a lovely texture and makes them quick to whip up for a last-minute dessert.

Ingredients

Scale

Dough:

  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Add-Ins:

  • ¾ cup sweetened shredded coconut
  • ½ cup semi-sweet chocolate chips
  • ¼ cup chopped almonds

Instructions

  1. Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Blend in Wet Ingredients: Beat in the egg and vanilla extract.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  4. Add Mix-Ins: Fold in the shredded coconut, chocolate chips, and chopped almonds.
  5. Air Fry: Preheat air fryer to 300°F (150°C). Line basket with parchment paper. Scoop dough into balls, place in the basket, flatten slightly. Air fry at 300°F for 7–9 minutes.
  6. Cool and Serve: Let cookies cool in the basket for 3–5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute dark chocolate chips for a richer flavor.
  • Add a splash of almond extract for extra nuttiness.
  • Store in an airtight container for up to 4 days.
  • Dough can be frozen and air fried straight from frozen—add 1–2 minutes to cook time.
