Chicken and Marinade:

  • 1 tbsp vegetable oil
  • 1 1/2 lbs boneless skinless chicken thighs, cut into chunks
  • Salt and black pepper to taste

Stew:

  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 tsp ground cayenne pepper (optional)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup natural peanut butter
  • 4 cups chicken broth
  • 2 medium sweet potatoes, peeled and cubed
  • 1 red bell pepper, sliced
  • 2 cups chopped collard greens or spinach
  • Juice of 1 lime
  • Chopped roasted peanuts and fresh cilantro for garnish (optional)

Instructions

  1. Marinate Chicken: Season chicken pieces with salt and pepper.
  2. Sear Chicken: In a large pot, heat oil and sear chicken until browned. Set aside.
  3. Sauté Aromatics: Sauté onion, garlic, ginger, cayenne, cumin, paprika, and coriander.
  4. Add Ingredients: Stir in tomatoes and peanut butter, then add broth, chicken, sweet potatoes, and bell pepper.
  5. Simmer: Cook for 20–25 minutes until chicken is cooked and potatoes are tender.
  6. Add Greens: Stir in greens and cook until wilted.
  7. Finish and Serve: Add lime juice, adjust seasoning, and serve hot, garnished with peanuts and cilantro.
