Chicken and Marinade:

- 1 1/2 lbs boneless skinless chicken thighs, cut into chunks

Stew:
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1/2 tsp ground cayenne pepper (optional)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp ground coriander
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup natural peanut butter
- 4 cups chicken broth
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 2 cups chopped collard greens or spinach
- Juice of 1 lime
- Chopped roasted peanuts and fresh cilantro for garnish (optional)
Instructions
- Marinate Chicken: Season chicken pieces with salt and pepper.
- Sear Chicken: In a large pot, heat oil and sear chicken until browned. Set aside.
- Sauté Aromatics: Sauté onion, garlic, ginger, cayenne, cumin, paprika, and coriander.
- Add Ingredients: Stir in tomatoes and peanut butter, then add broth, chicken, sweet potatoes, and bell pepper.
- Simmer: Cook for 20–25 minutes until chicken is cooked and potatoes are tender.
- Add Greens: Stir in greens and cook until wilted.
- Finish and Serve: Add lime juice, adjust seasoning, and serve hot, garnished with peanuts and cilantro.
